Belinda Aucott is a Champagne lover & self-confessed Francophile. Belinda is the author and illustrator of the blog, Champagne Republic. Trained in food and wine by Petaluma, Belinda has previously worked as Wine Educator for Berringer-Blass. During her career she has spent time as a Sommelier working for Marco Pierre-White at The Belvedere in London and enjoyed a variety of posts writing about food and wine for publications including; Men’s Style, National Liquor News, Indesign and GQ.

Simon Johnson are delighted to collaborate with Belinda in a pop up gallery to present her beautiful artworks at our Woollahra store, from April 4th to 8th. This Champagne & Cheese masterclass occurs alongside Belinda’s beautiful artworks with Belinda herself hosting, with a selection of cheeses expertly matched to a set of Champagne flights by Brand Ambassador Caroline Desaulle & Champagne sponsor Laurent Perrier Australia, for a truly unique & indulgent experience.

For me Champagne Republic is all about slowing down, it’s about popping open something exquisite and being amazed by it. It's a reminder to never lose the excitement that fills you the moment before you try something new.
