Tuna Ventresca Fillets in Olive Oil
Ventresca is the belly of the tuna, the most prized cut. The Bonito del Norte is white tuna caught in the Bay of Biscay during summer. The belly has the highest fat content and so it is the richest in flavour with a silky texture. The Tuna is line caught before being filleted and packed by hand. This is an artisan specialty produced by Ortiz.
