The fishermen use a little boat called a “Lampare” because of the lampade (lantern) they use to shine on the water at night to attract the fish. The fish are brought to the shore for processing. The head and tail are removed, gutted (but not filleted) maintaining their shape and beautiful silver skin. They are packed in tins and cooked in the oven then dressed with olive oil.
