Preserved Lemons


These small lemons are preserved in Morocco. They can be roasted whole alongside chicken or lamb, or used the traditional way by scraping away the flesh and pith, then finely slicing the rind to toss into tagines, couscous and salads.





Preserved lemons are a pantry staple. They can be added to a salad dressing, tossed through pasta with herbs, added to grilled or barbecued meats or fish or used to flavour roasted poultry.
