Woodbridge Smokehouse use apple wood from their own 25-acre organic apple orchard in their traditional hand-smoking processes to give the fish the distinctive flavours for which they’re renowned. The fish is cured in sea salt and demerara sugar, then smoked for 12 hours to deliver an intense yet balanced flavour.
