  • 1 kg boneless pork belly
  • 200 g Simon Johnson Red Curry Sauce
  • Tasman Sea Salt
  • 2 Carrots, sliced into julienne, or grated
  • ½ cup Simon Johnson white balsamic
  • 2 Lebanese cucumbers, sliced thinly
  • 1 cup Bean sprouts, washed & drained
  • 4-6 Long Bread Rolls, white
  • Lescure Butter
  • 1 bunch Coriander Leaves

Method

    Roasted Pork Belly

  1. Preheat oven to 200C
  2. Pour Simon Johnson Red Curry Sauce into a shallow baking tray
  3. Lay the Pork Belly on top and rub the sauce over the skin and meat, leave to marinate
  4. Sprinkle a little of the Tasman Sea Salt on top and place tray into the oven for 45mins
  5. Reduce heat after 45mins to 180C and rest for 15 mins inside with door closed
  6. Sides & Condiments

  7. Soak the sliced carrot in a small bowl, with the white balsamic condiment
  8. Halve the bread rolls and spread with a generous amount of Lescure butter
  9. To serve

  10. Slice the Pork Belly and drizzle with any juices from the tray
  11. Layer the cucumber, sliced pork, pickled carrot and bean sprouts in each bread roll and top with coriander.
  12. Add a dollop of Simon Johnson Sweet Chilli Sauce
  13. Serve with extra sweet chilli sauce on the side
