  • 2 Tbsp Simon Johnson everyday extra virgin olive oil
  • 1 Kg Black Mussels, cleaned & debearded
  • 1 Leek, white only, sliced finely
  • 1 Cup Simon Johnson Verjus
  • 0.5 Cup Flat leaf Parsley, chopped roughly
  • Simon Johnson Aioli
  • Tasman Sea Salt
  • Fries, (to serve, we used the oven bake variety.)

Method

  1. Heat olive oil over a medium heat in a 5L pot
  2. Add the chopped leek & sauté until soft, add the Simon Johnson Verjus
  3. Add mussels and shake the pan to distribute the contents, cover with lid
  4. Once the mussels begin to open, add the parsley
  5. Turn off the heat and set mussels aside in a serving bowl
  6. Serve Mussels with fries on the side, along with a generous sprinkle of Tasman Sea Salt & Simon Johnson Aioli for dipping
