  1. Preheat oven to 180C
  2. Line a large tray with baking paper
  3. Add the drumsticks, the halved eschallots, cocktail potatoes and dot the garlic cloves around the tray
  4. Drizzle a little olive oil over the potatoes and chicken & pour the balsamic vinegar gently over the top
  5. Season well with salt & pepper and bake in the oven for 1hr,
  6. Turn the drumsticks at 20 min intervals to caramelise in the sweet sticky syrup as it cooks and toss the potatoes through the balsamic vinegar to colour
  7. Scatter with spring onion, before serving at the table
